The Wine
“This wine is named ‘Nicolette’s’ after my beautiful partner of nearly 25 years. The word ‘selection’ best describes this wine, as the selection process begins in the vineyard at bloom in June. That selection process of block sections, specific vines, number of clusters per vine, green cropping and time of harvest continues in the vineyard through October. In the winery, the selection process continues with clusters going into the destemmer, berries coming out of the destemmer, the size and material of fermentation tank to be used, the choice of barrel cooper and forest, the amount of time in barrel, the amount of new oak, and then the final blend.
“Not only has Nicolette been my partner in life for over 25 years, she has also been my partner in business for over 17 years on the purchase of Youngberg Hill. Nicolette did not know what she was getting into, but has been a trooper over this journey. As a city girl born and raised in Chicago (and 100% first-generation Greek), she was not familiar or prepared for the small-town country life that greeted us in McMinnville. I grew up on a farm in Iowa and from day one hopped on the tractor and thrived in an appreciation of a small country-town culture. Remember the old TV show Green Acres? That was us. Over the years, Nicolette has acclimated to the small town country life and raised three beautiful daughters to be strong-willed and self-sufficient. Along the way, Nicolette has learned the many aspects of farming including raising cows, goats and chickens. She has also become more involved on the winemaking side and has been instrumental in the expansion of our wine to include sparkling wine, rosé, and Rhône blends.” – Wayne Bailey, winemaker/owner

The Winery
Youngberg Hill was established in 1989 with the first planting of a field mix of own-rooted Pommard and Wädenswil vines (the Natasha and Jordan blocks). The Baileys purchased Youngberg Hill in 2003 and began practicing organic farming immediately. The Bailey block was planted in 2008 to Dijon 777. In 2011, the vineyard transitioned to biodynamic farming practices and in 2017 began no-till farming. The vineyard is also non-irrigated. The goal with these holistic and sustainable farming practices is to allow the soil to remain healthy. By doing so, it provides the foundation for a healthy environment for healthy vines to grow.
